Cooking Class with Freddie Bitsoie

Bon Appétit, in collaboration with Target Native American & Indigenous Business Council, will be hosting a cooking class on October 26th, from 2:30 pm to 3:30 pm. Q&A and tasting will follow the class at Target Plaza Café.

Join us in person at “Sapor” Food Station, or via Zoom.

On the menu:

  • New Mexican Red Chile Posole
  • Squash and Corn
  • Bean Salad
  • Sumac Seared Lamb with Onion Sauce
  • Chia Seed with Blue Berry

About the Chef: Freddie Bitsoie is a proud Navajo and an award-winning chef. He is the former executive chef of Mitsitam Native Foods Café, located inside Washington, D.C.’s Smithsonian National Museum of the American Indian. Bitsoie was previously the executive chef of Fire Rock Casino and is the winner of the Smithsonian’s Native Chef Competition. He has contributed to a number of Native American cookbooks, including America: The Cookbook (Phaidon, 2017) and James Beard Award–winner Sioux Chef’s Indigenous Kitchen (University of Minnesota Press, 2017). He currently is the Chef In Resident for North American Traditional Indigenous Food Systems (NATIFS).
